With school being back the kids lunch-boxes needed filling up – since they are all in love with blueberries at the moment I decided I would whip up a batch of yummy muffins.
I didn’t have a tried and true recipe to use, so I just altered one that I know they liked ABC muffins (Original recipe here)
Liz’s Blueberry and Chocolate Chip mini muffins
1/2 cup Soft Brown Sugar
1/4 tsp salt
1/4 cup oil
1 large egg (or 2 small eggs)
1/2 cup blueberries
1/2 cup chocolate chips
2 cups plain flour
2 tsp baking powder
Preheat oven to 200 degrees celcius.
In a large bowl, mix together the sugar, salt, oil, egg and milk until well mixed.
Stir in the chocolate chips and the blueberries.
Shake the flour and baking powder on to the wet mixture and fold together until just dampened.
Spoon into mini-muffin pans.
Bake for 9-11 minutes or until golden brown
I did find the mixture quite stiff/dry, but the muffins themselves turned out beautifully.
These are perfect in lunch boxes, or for an after-school snack
EDIT: I made this recipe a 2nd time, and after looking into other blueberry muffin recipes it seemed a lot of them included ripe mashed banana. The 2nd time I made this I included 2 mashed bananas – while it did make the batter a more “normal muffin” constancy it didn’t seem to change the overall result hugely.
